Each November, our harvest begins—a process which begins with the hand picking of our trees. We focus on cold pressing exclusively, maintaining temperatures low enough to protect the delicate flavours and nutritional qualities that make our extra virgin olive oil truly special. The result is a vibrant, rich olive oil that embodies the distinctive taste of Olympia’s land, with hints of pepper and earthy tones.
